This morning, Class 2 explored the topic of the Great Fire of London. We had lots of different art activities that they could choose from:

  • Designing a new and improved St Paul’s Cathedral
  • Using oil pastels to show what London looked like in flames
  • Making our own origami boats to save all our belongings
  • Creating a silhouette of burning houses using collage
  • Becoming the baker on Pudding Lane and making some delicious bread

Quick Bread Dough

yield: 8-16 SERVINGS

INGREDIENTS:

  • 1 tbsp active dry yeast
  • 1 cup warm water (think warm bath water)
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive or vegetable oil (use vegetable for sweet bread recipes)
  • 2 1/2 cups flour

DIRECTIONS:

  1. Proof the yeast using the oil and sugar: To make sure active dry yeast (not quick-rise yeast) is alive and active, you may first want to proof it. Here’s how: Dissolve one package of yeast and 1 teaspoon sugar in 1/4 cup warm water (110° to 115°). Let stand for 5 to 10 minutes.
  2. Mix the salt into the flour in a stand mixer bowl.
  3. After the yeast has proofed, add the yeast mixture to the flour. Knead until a dough forms, and then continue kneading for an additional 5-6 minutes until dough is elastic.
  4. Cover and let rise for about 10 minutes.
  5. From this point you can roll it out and use it for any recipe calling for dough!

The baking temperature and time you’ll need to use will vary depending on what you’re making with the dough, but as a frame of reference– you’ll be in the neighbourhood of 170ºC and 15-ish minutes.
